Making weekly meal plans can be time-consuming, but they also save you money, so I figured since I'm already doing the work every week, maybe someone else can benefit if I share it. Lunches for March 24-30

Here are our lunches for the same week.  I seem to be on a chicken kick this week...

Thursday, March 24:  chicken stir-fry, rice, mandarin oranges

Tuesday, March 29:  solomon grundy (I add garlic, oregano, and basil to this recipe), rice, salad

Meal Plan for March 15-21

Whoops!

Life got really hectic for a while, and I just haven't taken the time to post my meal plans lately.  Meal planning has been more sporadic for me lately too.  I hate buying meal ingredients day by day, though; we always spend more money when I do, and we wind up eating out more frequently too.  Anyway, I'm going to try to do better.  This meal plan is actually from the previous week, as I'm posting it at the end of the week as I plan this week's meals, but I figured I owed ya'll a bonus. :) Several of my recipes this week came from Christy @ The Girl Who Ate Everything.  If you love food, you should definitely check out her blog!

Chili Mac

This one is super easy...I learned this from my former mother-in-law.  It's not really chili mac in the traditional sense, but my kids love it.

Chili Mac

1 lb. ground beef
1 jar Ragu Traditional spaghetti sauce
1/2 lb. elbow macaroni

Heat salted water over high heat in large saucepan for elbow macaroni.  Meanwhile, brown ground beef in skillet.  Drain fat and rinse meat.  Add spaghetti sauce and heat over medium heat until bubbling, then remove from heat.  When salted water begins to boil, add macaroni and cook until tender.  Drain water from macaroni and add slowly to spaghetti sauce mixture, stirring as you add (depending on how saucy you want it, you may not need all of the cooked macaroni).

Garlic Chicken

Garlic Chicken

Very garlicky, but fortunately my kids are okay with that. :)

1/4 c. butter
6-8 cloves garlic, minced
garlic powder
2 lbs. chicken breasts or tenders
1 c. water
1 chicken bouillion cube (water and chicken bouillion cube can be replaced by 8 oz. chicken stock, or omitted altogether if you're using tenders and don't want to make gravy)

Melt 1/4 c. butter over medium heat in large skillet.  Add minced garlic and cook for 1 minute or until garlic is fragrant and slightly browned.  Add chicken to skillet; sprinkle with salt and dust with garlic powder.  Turn when edges of chicken turn white.  If you're using chicken breasts or want to make gravy, add water and bouillion cube or chicken stock and bring to a boil.  Reduce heat and simmer 10-15 minutes, or until chicken is done through.

To make gravy:  Increase heat to medium-high and bring juices to a boil.  Boil until reduced by 1/2.  In a small bowl, mix 2 Tbsp. cornstarch and 1/4 c. cold water until smooth.  Add cornstarch mixture to reduced juices slowly, stirring constantly, until desired consistency is reached.  Remove from heat immediately.
